Trying to eat healthily, but tired of your usual rotation? How about an egg bowl recipe? Bowls are an easy way to make a healthy meal that is also oh-so-satisfying. Julie Freed of Freed Events, LLC, shares her @Freed_fit poached egg bowl recipe loaded with lots of fresh veggies. Thanks, Julie!

Poached Egg Bowl Recipe with Veggies

Poached Egg Bowl Recipe
Poached Egg and Veggie Bowl

Ingriedients

• ½ red onion, chopped
• 1 cup mushrooms, sliced
• 1 cup frozen cauliflower rice
• 1 cup kale, deveined and chopped
• 1 cup tomatoes, diced
• 1 tbsp. apple cider vinegar
• 2 cage-free eggs
• ½ lemon
• ¼ avocado, chopped
• salt & pepper and paprika – to taste

Instructions

  1. Coat a large pan with cooking spray, add onion and mushrooms and cook until brown
  2. Then add cauliflower rice, kale, and tomatoes and sauté until cooked thru.
  3. Season to taste.
  4. In a separate medium-size pot, bring water to boil. Reduce heat to low and add the apple cider vinegar.
  5. Stir water to create a vortex and crack the egg open in the middle of the pot.
  6. Set a timer for 4 minutes and remove the egg with a slotted spoon.
    Place egg on a paper towel to remove excess water.
  7. Repeat the two steps above for the second egg.
  8. Serve cooked vegetables in a bowl, topped with the poached eggs and avocado.
  9. Squeeze lemon on top to draw out the flavor.
