Bananas Foster French Toast Recipe

Brunch is probably our favorite meal. Sweet and savory dishes, a few easy cocktails or bubbles, and conversation and laughter that lingers well into the late afternoon. But, what to serve if you’re the one actually hosting brunch?

Chef Phil Lewis of Rochambeau was kind enough to share his bananas foster French toast recipe, which is always a hit at the chic Back Bay French eatery. Besides serving a delectable brunch menu every Saturday and Sunday, Rochambeau’s dinner menu is well worth the trip to the two-story Boylston Street restaurant. INGREDIENTS

  1. 4 slices of brioche
  2. 1 egg
  3. 2 tbsp milk
  4. 2 oz white sugar
  5. 1 tsp vanilla
  6. 2 bananas 
  7. 4 oz of cubed butter, plus 1 tbsp
  8. 2 oz brown sugar
  9. 2 oz dark rum

INSTRUCTIONS

For French Toast

  1. Mix the egg, white sugar, milk & vanilla. 
  2. Add the sliced brioche and allow to sit for 30 seconds to absorb the mixture.
  3. In a non-stick pan, melt 1 tablespoon of butter.
  4. Add French toast, cooking 2-3 minutes per side to achieve a golden brown. (Keep on medium to low heat to prevent from burning.)
  5. Remove from heat and set aside.

For Sauce

  1. Melt cubed butter and brown sugar in a separate pan. 
  2. Cook for 1-2 minutes and then add bananas, continuing to cook for 2-3 more minutes.
  3. Remove from stove and deglaze with rum, place back on the heat to cook off the rum. 
  4. At this point, the sauce will come together.
  5. Cut French toast in half and place on a plate, top with sauce and enjoy!
