As a parent of two young children, my weekend mornings begin just as early as my work week…
At 6 am, I hear the first drip of the coffee machine followed by the sound of my daughter’s door opening. And once I’ve downed my first 2 cups of Joe, my mind starts racing with ideas for morning activities. When the idea of changing out of my PJ’s to head out into the Boston cold is just too much to take, I dig thru my pantry and strategize how I’m going to pretend that my healthful gluten-free muffins are going to be sold as ‘princess fairy cupcakes’ to my 3 ½-year-old. Word to the wiss- a little sprinkle dusting works like a charm!
Gluten-Free Apple Oatmeal Craisin Muffins
- 1.5 cups gluten-free flour
- ½ cup almond meal
- 1 tbsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 2 packets instant apple cinnamon oatmeal
- ½ cup coconut sugar
- 2 eggs
- 1 cup vanilla almond milk
- 3 tbsp. applesauce
- ½ cup Craisins
- Preheat oven to 350 degrees Fahrenheit.
- Combine all dry ingredients in one bowl and all wet ingredients in another.
- Slowly incorporate wet ingredients with dry ingredients; mix with an electric blender.
- Fill muffin cups about ¾ full.
- Bake for 15-20 minutes.
