And it’s not just because the words “butter” and “nut” are part of the name. 😉 That golden color tells us it’s loaded with Vitamin A. It’s also fiber-friendly and has more potassium than a banana!

Here’s an idea for a quick and healthy low-carb gluten-free butternut squash dish that is also beyond yummy!!!

AUTUMN PASTA – GLUTEN-FREE PASTA RECIPE

  1. Heat black and white truffle oil in a skillet.
  2. Saute butternut squash noodles for two minutes.
  3. Top with shredded Parmesan and Asiago cheese.
  4. Salt and pepper to taste.

Voila! A quick and delicious meal that you can gobble up without any guilt!

TIP: We love that Wegman’s has lots of prepared vegetables. You can easily shred the “noodles” on your own. But, if you’re short on time, hit the produce section of Wegman’s and pick up these noodles. But, don’t stop there! Take a look around and let your foodie imagination go wild!
