Mushroom Bisque Recipe

Good skin starts with sleep, hydration from within, and proper nutrition. Staying away from processed foods is an obvious rule, but choosing foods that act as “skin prescriptions” is also an important good-skin habit. For example, if you have rosacea, acne, or eczema, try adding more mushrooms to your diet. 

While we find certain mushrooms in many skincare products for skin brightening and calming, consuming mushrooms may have a significant therapeutic gain not just for your skin but for your overall health.

Given the wide variety of mushrooms, there is a large spectrum of benefits. But the general gist is this – antioxidant-rich mushrooms fight inflammation, boost the immune system, and potentially prevent wrinkles and other environmental damage. 

Ingredients for Mushroom Bisque Recipe
Shitake, Lions Mane, Maitake, and Oyster Mushrooms

Sooooo, why not try this easy and tasty mushroom bisque recipe. Not only is it good for your skin, but it is light and low fat. Did you know mushrooms don’t have any calories?! For maximum advantage, you might consider making it a “raw and cold” bisque. But, that doesn’t sound as appealing as a warm bowl of bisque during these colder months.

INGREDIENTS

  • 2 lbs. of a variety of mushrooms 
  • 2 pats of butter
  • 1 chopped shallot
  • 1 minced garlic clover
  • 1 sprig of fresh thyme
  • 1 inch of fresh rosemary
  • salt & pepper to taste
  • 1/4 cup of sherry (more depending on your taste)
  • 1 cups of beef or vegetable broth
  • 2 tablespoons of either sour cream or the greek yogurt of your choice

INSTRUCTIONS

Mushroom Bisque Recipe
“Squeking” the Mushrooms
  1. Over high heat, “squeak” the mushrooms until most water has evaporated. 
  2. Add two pats of butter, shallot, garlic, salt, pepper, thyme, and rosemary. Saute until everything is golden brown.
  3. Add sherry and cook until mostly evaporated.
  4. Add broth and bring to a simmer. 
  5. Plop everything into a food processor and blend away! 
  6. Serve with a dollop of either sour cream or Greek yogurt and garnish with fresh thyme. Also, we won’t judge if you add a bit more sherry. 😉 Another tasty addition? Drizzle a bit of your favorite truffle oil on top for a bit of added richness.
