It took a while for me to get this one right… I really enjoyed some lemon rice a coworker brought me a while back.  His wife, who just came to the states from India made some lemon rice that was satisfyingly spicy and tangy at the same time.

I believe this recipe captures the essence of that south Indian dish – and it’s grain free and paleo!

Start by melting coconut oil (or some other fat) over medium heat in a large pan with lid

Add mustard seeds curry leaves onion and peppers; heat until peppers/onions look cooked.  If you’re having trouble finding curry leaves, try your local Indian grocery store.

Add coriander, tumeric, curry, and grated ginger; mix until blended

Add cauliflower, cashews, and enough water to cover the bottom of the pan; mix until blended

Salt & Pepper to taste

Turn heat to medium high and cover;

Cook for 5 minutes, stirring occasionally until cauliflower is fully cooked and has a soft texture

Mix in lemon juice and zest

Spicy Lemon Cauliflower "Rice"
 
Ingredients
  • 1 small head of cauliflower (4-5 cups riced)
  • 1 small sweet onion, chopped
  • 3 Tbsp coconut oil (or some other cooking fat)
  • 2 tsp mustard seeds
  • 3-4 curry leaves (you can substitute bay leaves, but it's not the same)
  • 2 serrano peppers (or some other spicy pepper), quartered lengthwise
  • ¼ tsp coriander
  • 1½ tsp tumeric powder
  • 1.5 tsp curry powder
  • 1" piece of ginger, grated
  • ½ cup Cashew pieces (roasted and unsalted)
  • 2 lemons, zest and juice
  • Salt & Pepper to taste
