Paleo mayo is quick, fast, and easy…

Paleo Mayo
  • 1 c EXTRA LIGHT olive oil
  • 1 egg
  • ½ t Dijon or yellow mustard
  • ½ t salt
  • ¼ t cayenne pepper
  1. In a blender, add egg, mustard and cayenne pepper. Blend well. Kepp the lid on the blender and keep the blender on blend setting. Remove the center cap on the blender cover and EVER SO SLOWLY, drip by drip, add the olive oil to the mixture. TAKE YOUR TIME, don’t pour, you MUST drizzle slowly for the oil to properly incorporate and a thick consistency to be achieved. Once all of the olive oil has been added, SLWOLY fold in the salt, a sprinkle at a time, if you hurry, it will “melt” your mayonnaise…trust me, I have made mayo soup before and would save you from this tragedy. :)
