This is my grandmother’s recipe with a few slight tweaks.   It’s magical because it seems to heal just about any ailment — it’s super good, and super easy!

If you have extra broth, store it in a plastic container in the freezer for whenever you need a little extra flavor in a recipe.

Magical Healing Chicken Soup

  • 1 whole cut-up chicken (get rid of the innards - keep the neck)
  • 1 Green Bell Pepper (cut in quarters, seeds removed)
  • 1 Sweet Onion (small, cut in half)
  • 4 Cloves Garlic (crushed)
  • 2 Bay Leaves
  • 1 Tbsp Dried Oregano
  • Salt to taste
  • Pepper to Taste
  • Water
  1. Add Chicken, Green Bell Pepper, Onion, Garlic, Bay Leaves, and salt (add 1 tbsp to start) to a dutch oven and fill with water. Bring to a boil, and lower to a simmer for approximately 3 hours.
  2. Remove and discard vegetables. Remove chicken and set aside (discard neck and non-desirable pieces). Strain broth and skim fat. Put broth back on medium heat.
  3. Remove bones, skin, and non-meaty parts of the chicken and discard. Break up chicken into small pieces and add back to broth. Add oregano and any additional needed Salt and Pepper to taste.
  4. Cook for an additional 30 minutes until seasoning tastes right.
