Another Sunday Funday came around and I had a real taste for Kale for some reason.  I came across an old recipe for curried greens and thought I’d shake things up a bit.  The original recipe called for brown sugar and potatoes — both of which I do not eat — so I spiced things up a bit and paleo-ized it!

Start by removing the ribs from the kale and cutting it into bite sized pieces

Melt ghee in large pan, add onion, salt, & pepper and cook until translucent… Add garlic and cook another minute or two… then add chicken broth and bring to a fast simmer

While this is cooking, fry the cubed sweet potato to 1/2 cup of coconut oil and fry until golden brown

Add kale to the onion mixture, and cover for another minute or two… Uncover, and start turning the kale until it’s dark green and mostly cooked…

Creamed Curry Kale16 Add remaining coconut milk & curry paste, and let it reduce until it looks ready…

Add sweet potatoes

 and… ENJOY!

Creamed Coconut Curry Kale w/Sweet Potato
 
Ingredients
  • 2 bunches of kale, ribs removed, cut into bite sized pieces
  • 1 sweet potato, peeled and cubed into half inch pieces
  • 1 medium yellow onion, diced
  • 3 tbsp grass fed ghee
  • 2 tbsp red curry paste
  • 2 cups full fat coconut milk + ½ cup
  • 1 c chicken broth
Instructions
  1. Melt ghee in large pan
  2. Add onion, salt, & pepper and cook until translucent
  3. Add garlic and cook another minute or two
  4. Add chicken broth and bring to a fast simmer
  5. Add kale, and cover for another minute or two
  6. Uncover, and start turning the kale until it's dark green and mostly cooked
  7. Add remaining ½ cup coconut milk
  8. Let it reduce until it looks ready...
  9. Add sweet potatoes
