This has become a real staple in my house!  I use modifications of this recipe for all kinds of “rice” dishes.  The key is to “rice” the cauliflower to a consistent size using a food processor.

First, clean and cut the cauliflower into equal bite size pieces (they can be really big bites as long as they’re consistent.

Add the dried cauliflower pieces to the food processor.  Don’t overfill it; you don’t want the pieces to really stack on top of each other, so it may take several batches to get the job done.  Pulse until you have a consistent rice sized pieces.

Add oil to a pan/pot with lid over medium high heat, add onion (optional) and salt & pepper to taste.  Cook until onions are translucent.

Add cauliflower and enough water to fill the pot about 1/8th of the way (from bottom to top of cauliflower) and mix well.  Cover and cook for 5-10 minutes, stirring occasionally until soft.
